- 1/4 cup chopped fresh mozzarella cheese
Preparation
- Step 1: Preheat oven to 400F
- Step 2: Rinse the artichokes under cold water, then remove the stems and tough outer leaves
- Step 3: Cut off the top inch of each artichoke and scoop out the fuzzy choke with a spoon
- Step 4: In a large bowl, mix together breadcrumbs, Parmesan cheese, parsley, garlic, basil, salt, and pepper
- Step 5: Stuff each artichoke with the breadcrumb mixture, dividing it evenly between the two artichokes
- Step 6: Drizzle the tops with olive oil and sprinkle with sun-dried tomatoes and mozzarella cheese
- Step 7: Wrap each artichoke in foil and bake for 30 minutes
- Step 8: Remove the foil and continue baking for an additional 15-20 minutes, or until the artichokes are tender and the filling is golden brown
Chef’s Tip: To ensure the artichokes are cooked through, check for tenderness by inserting a knife into the base of the stem – it should slide in easily
