Stuffed Artichoke Main Dish

Ingredients

  • 2 large artichokes
  • 1/2 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup cooked sausage, sliced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 lemon, cut into wedges

Preparation

  1. Step 1: Preheat the oven to 425F (220C)
  2. Step 2: Rinse the artichokes under cold water, then remove the stems and tough outer leaves
  3. Step 3: In a large bowl, mix together breadcrumbs, parmesan cheese, parsley, garlic, salt, and pepper
  4. Step 4: Stuff each artichoke with the breadcrumb mixture, filling the leaves and center
  5. Step 5: In a separate pan, heat the olive oil and sauté the chopped onion and bell pepper until tender
  6. Step 6: Add the cooked sausage to the pan and stir to combine
  7. Step 7: Place the stuffed artichokes in a baking dish and spoon the sausage and vegetable mixture around them
  8. Step 8: Drizzle the tops with a little olive oil and cover with foil
  9. Step 9: Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the artichokes are tender
  10. Step 10: Serve the artichokes hot with lemon wedges on the side
