Ingredients
- 2 cups fresh basil leaves
- 1/3 cup pine nuts
- 1/2 cup grated parmesan cheese
- 1/2 cup extra virgin olive oil
- 2 cloves garlic, peeled and minced
- Salt, to taste
Preparation
- Step 1: Rinse the fresh basil leaves and pat them dry with a paper towel to remove excess moisture
- Step 2: In a food processor or blender, combine the basil leaves, pine nuts, and garlic, and process until the mixture is well combined and the basil is finely chopped
- Step 3: Add the grated parmesan cheese to the processor and process until the cheese is well combined with the basil mixture
- Step 4: With the processor running, slowly pour in the extra virgin olive oil through the top, and process until the pesto reaches the desired consistency
- Step 5: Season the pesto with salt to taste, and process for another minute to combine
- Step 6: Transfer the pesto to an airtight container and store it in the refrigerator for up to 1 week
