Ingredients

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup cold unsalted butter
  • 1/2 cup ice-cold water
  • 6-8 medium-sized apples, peeled and sliced
  • 1/2 cup granulated sugar
  • 2 tbsp grated fresh ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves

Preparation

  1. Step 1: Preheat the oven to 375F
  2. Step 2: In a large bowl, whisk together the flour and salt
  3. Step 3: Add the cold butter to the flour mixture and use a pastry blender or fingers to work it into the flour until it resembles coarse crumbs
  4. Step 4: Gradually add the ice-cold water to the flour mixture, stirring with a fork until the dough comes together in a ball
  5. Step 5: Divide the dough in half and shape into disks, wrapping each in plastic wrap and refrigerating for at least 30 minutes
  6. Step 6: In a separate large bowl, combine the sliced apples, granulated sugar, grated ginger, cinnamon, nutmeg, and cloves, tossing until the apples are evenly coated
  7. Step 7: On a lightly floured surface, roll out one of the chilled dough disks to a thickness of about 1/8 inch
  8. Step 8: Transfer the rolled-out dough to a 9-inch pie dish and trim the edges to fit
  9. Step 9: Fill the pie crust with the apple mixture and dot the top with any remaining butter
  10. Step 10: Roll out the second dough disk to a thickness of about 1/8 inch and use to cover the pie, crimping the edges to seal
  11. Step 11: Cut a few slits in the top crust to allow steam to escape during baking
  12. Step 12: Bake the pie for 40-50 minutes, or until the crust is golden brown and the apples are tender

Chef’s Tip: To ensure a flaky crust, keep the butter and water cold, and handle the dough as little as possible
