Ingredients
- 2 cups all-purpose flour
- 1 tsp salt
- 1 cup cold unsalted butter
- 1/2 cup ice-cold water
- 6-8 medium-sized apples, peeled and sliced
- 1/2 cup granulated sugar
- 2 tbsp grated fresh ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
Preparation
- Step 1: Preheat the oven to 375F
- Step 2: In a large bowl, whisk together the flour and salt
- Step 3: Add the cold butter to the flour mixture and use a pastry blender or fingers to work it into the flour until it resembles coarse crumbs
- Step 4: Gradually add the ice-cold water to the flour mixture, stirring with a fork until the dough comes together in a ball
- Step 5: Divide the dough in half and shape into disks, wrapping each in plastic wrap and refrigerating for at least 30 minutes
- Step 6: In a separate large bowl, combine the sliced apples, granulated sugar, grated ginger, cinnamon, nutmeg, and cloves, tossing until the apples are evenly coated
- Step 7: On a lightly floured surface, roll out one of the chilled dough disks to a thickness of about 1/8 inch
- Step 8: Transfer the rolled-out dough to a 9-inch pie dish and trim the edges to fit
- Step 9: Fill the pie crust with the apple mixture and dot the top with any remaining butter
- Step 10: Roll out the second dough disk to a thickness of about 1/8 inch and use to cover the pie, crimping the edges to seal
- Step 11: Cut a few slits in the top crust to allow steam to escape during baking
- Step 12: Bake the pie for 40-50 minutes, or until the crust is golden brown and the apples are tender
Chef’s Tip: To ensure a flaky crust, keep the butter and water cold, and handle the dough as little as possible
