Ingredients
- 8 oz pasta of your choice
- 1 cup mixed seafood such as shrimp, scallops, and mussels
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1 cup Kalamata olives, pitted
- 1/2 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- salt and pepper to taste
- fresh parsley, chopped
Preparation
- Step 1: Cook the pasta according to the package instructions until al dente, then set aside to cool
- Step 2: In a large bowl, whisk together the olive oil, lemon juice, and dried oregano to make the dressing
- Step 3: Add the mixed seafood to the bowl and toss to coat with the dressing
- Step 4: Add the cooked pasta, cherry tomatoes, cucumber, and olives to the bowl and toss to combine
- Step 5: Crumble the feta cheese over the top of the salad and toss gently
- Step 6: Season the salad with salt and pepper to taste
- Step 7: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld
- Step 8: Just before serving, sprinkle the chopped parsley over the top of the salad and serve chilled
