Mediterranean Pasta Salad

Ingredients

  • 8 oz pasta of your choice
  • 1 cup mixed seafood such as shrimp, scallops, and mussels
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • salt and pepper to taste
  • fresh parsley, chopped

Preparation

  1. Step 1: Cook the pasta according to the package instructions until al dente, then set aside to cool
  2. Step 2: In a large bowl, whisk together the olive oil, lemon juice, and dried oregano to make the dressing
  3. Step 3: Add the mixed seafood to the bowl and toss to coat with the dressing
  4. Step 4: Add the cooked pasta, cherry tomatoes, cucumber, and olives to the bowl and toss to combine
  5. Step 5: Crumble the feta cheese over the top of the salad and toss gently
  6. Step 6: Season the salad with salt and pepper to taste
  7. Step 7: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld
  8. Step 8: Just before serving, sprinkle the chopped parsley over the top of the salad and serve chilled

Chef’s Tip: To add some extra flavor to the salad, try marinating the seafood in the dressing for at least 30 minutes before adding it to the pasta and other ingredients
