Meatball subs are a classic Italian-American dish that is perfect for lunch or dinner, consisting of juicy meatballs served in a crispy sub roll with melted mozzarella cheese and marinara sauce. Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon Italian seasoning
- 4 sub rolls
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
Preparation
- Step 1: Preheat the oven to 400F
- Step 2: In a large bowl, combine the ground beef, breadcrumbs, egg, Parmesan cheese, parsley, garlic, salt, pepper, and Italian seasoning, mix well with your hands until just combined
- Step 3: Use your hands to shape the mixture into meatballs, about 1 1/2 inches in diameter, you should end up with around 20 meatballs
- Step 4: Place the meatballs on a baking sheet lined with parchment paper, leaving a little space between each meatball to allow for even cooking
- Step 5: Bake the meatballs in the preheated oven for 18-20 minutes, or until cooked through
- Step 6: While the meatballs are baking, heat the marinara sauce in a large saucepan over medium-low heat
- Step 7: Once the meatballs are done, carefully place them in the saucepan with the marinara sauce and let them simmer for a few minutes to absorb the flavors
- Step 8: Slice the sub rolls in half and place them on a baking sheet
- Step 9: Spoon some of the marinara sauce on the bottom half of each sub roll, then add 4-5 meatballs on top of the sauce
- Step 10: Sprinkle shredded mozzarella cheese over the meatballs
- Step 11: Place the baking sheet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly
- Step 12: Remove the subs from the oven and top with the other half of the sub roll
Chef’s Tip: To make the meatballs more tender, do not overmix the meat mixture, and make sure to handle the meatballs gently when placing them on the baking sheet and in the saucepan
