Green Monster Ice Pops

Ingredients

  • 1 cup fresh spinach leaves
  • 1 ripe avocado, peeled and pitted
  • 1 cup frozen pineapple chunks
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon honey
  • 1/4 cup coconut water
  • Ice pop molds and sticks

Preparation

  1. Step 1: Rinse the spinach leaves and add them to a blender or food processor with the avocado, pineapple, Greek yogurt, and honey
  2. Step 2: Blend the mixture on high speed until smooth and creamy, stopping to scrape down the sides of the blender as needed
  3. Step 3: Add the coconut water to the blender and blend until well combined
  4. Step 4: Taste the mixture and adjust the sweetness or consistency as needed
  5. Step 5: Pour the mixture into ice pop molds, leaving about 1/4 inch of space at the top
  6. Step 6: Insert an ice pop stick into each mold and place them in the freezer
  7. Step 7: Freeze the ice pops for at least 4 hours or overnight until solid
  8. Step 8: To unmold the ice pops, run the molds under warm water for a few seconds and gently pull out the sticks
