Ingredients
- 1 cup fresh spinach leaves
- 1 ripe avocado, peeled and pitted
- 1 cup frozen pineapple chunks
- 1/2 cup plain Greek yogurt
- 1 tablespoon honey
- 1/4 cup coconut water
- Ice pop molds and sticks
Preparation
- Step 1: Rinse the spinach leaves and add them to a blender or food processor with the avocado, pineapple, Greek yogurt, and honey
- Step 2: Blend the mixture on high speed until smooth and creamy, stopping to scrape down the sides of the blender as needed
- Step 3: Add the coconut water to the blender and blend until well combined
- Step 4: Taste the mixture and adjust the sweetness or consistency as needed
- Step 5: Pour the mixture into ice pop molds, leaving about 1/4 inch of space at the top
- Step 6: Insert an ice pop stick into each mold and place them in the freezer
