Classic Flan Recipe

Flan is a classic dessert that consists of a creamy custard base topped with a layer of caramel, it is a popular dessert in many countries and is known for its rich and smooth texture, the cooking chef version of flan is a variation that uses a cooking chef machine to simplify the preparation process, this recipe is perfect for anyone who wants to try a new dessert, it is easy to make and requires only a few ingredients, the result is a delicious and creamy flan that is sure to impress your family and friends

Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract
  • 3 large eggs
  • 1/4 cup granulated sugar for caramel

Preparation

  1. Step 1: Preheat the cooking chef machine to 180C
  2. Step 2: In a medium saucepan combine the granulated sugar, heavy cream, whole milk, and kosher salt, heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling
  3. Step 3: In a small bowl whisk together the vanilla extract and eggs
  4. Step 4: Gradually add the hot cream mixture to the egg mixture, whisking constantly to prevent the eggs from scrambling
  5. Step 5: Pour the mixture into 4 ramekins or small baking dishes
  6. Step 6: Place the ramekins in the cooking chef machine and cook for 25-30 minutes, or until the edges are set and the centers are still slightly jiggly
  7. Step 7: Remove the ramekins from the machine and let them cool to room temperature
  8. Step 8: Cover the ramekins with plastic wrap and refrigerate for at least 2 hours, or overnight
  9. Step 9: Just before serving, caramelize the granulated sugar in a small saucepan over medium heat, stirring constantly, until it turns a deep amber color
  10. Step 10: Pour the caramel sauce over the top of each flan and serve chilled

Chef’s Tip: To ensure that the flan is creamy and smooth, it is important to not overcook it, the edges should be set, but the centers should still be slightly jiggly when it is removed from the machine
